How to Make: Pickled Korean Radish with Red Cabbage
Pickling Radishes and Red Cabbages
Pickled vegetables are one of the most common side dishes in Korean cuisine. They are easy to make and can feed a lot of people - they also pair well with just about any main dish (especially Korean BBQ and other grilled meat)!!!
Let's take a look at how to make some pickled Korean vegetables!
First up: Get some Korean or daikon radishes and red cabbage (much sweeter than white cabbage).
You will also need vinegar (about one or two bottles, depending on how much you want to make), and some white sugar.
However, you can change up the recipe if you like! Try apple cider vinegar to use less sugar, or use a soft beverage like a lemon-lime soda in place of the sugar. (More on that later!)
Start by setting up in a nice spot where you'll be able to peel the radishes (like you would a potato) and make sure you have some cutting boards for slicing the cabbage and radish.
Slice the cabbage into small, thin pieces. If you need to, peel off the outer layers and cut them individually. Be careful not to cut your fingers!
The cabbage should look like this when you're done!
Now for the radishes! You can cut them in any shape you like really. Some people prefer cubes, others prefer slices. Maybe go with the shape that is easiest for you to cut. ^_^
These radishes are cut "restaurant style" - half circles of varying thickness. It's all freehand, so don't worry about perfect shapes. It will taste the same. Hahah.
Now for the pickling! If you are using sugar, you will want to dissolve it by boiling it in the vinegar and then pouring that over the sliced and chopped radishes and cabbages. If you want to use soda (we didn't have sugar :P), then you can just pour it over the top of the veggies and pour the vinegar on after. We used orange soda which gave it a real nice flavor! You will want enough combined liquid for a slightly tangy yet sweet taste, and you'll keep the pickled vegetables stored in the liquid, so be sure to use a large container with an air-sealed lid.
Fun Fact!!! Drinking vinegar is very good for your health! Try boiling some with different fruits and/or fruit peels. Drink it chilled for a healthy kickstarter at breakfast time! I like pineapple vinegar, myself. I was hesitant to try it, but it was actually quite delicious! Give it a try!
